"Proper" adjustment will likely depend on your system but what follows is based on my trial and error experiances with the WW1G configuration utility. Settings are based on my configuration and are not by any means definative.
Lock Full Screen Mode - Disables the ability to tab out of WW1. Don't use it even though have found the the game can behave oddly if minimized and then restored.
Screen Resolution - Only three resolutions appear supported via drop down menu: 800 x 600, 1024 x 768 and Use Monitor Resolution. I have a wide sceern monitor and use the last setting without issue.
Enable Sound Effects - A game without sound is...
Load All Map At Start - I had some issues with the game locking up when scrolling accross the map for the first time but checking this box increases an already lengthly loading time. If you don't have scrolling issues you might be better off to leave this unchecked.
Low Color Depth - Checking this box may improve performance on marginal computers.
Play Intro Video - Subject to taste, checking this increases load time.
Enable In Game Music - Subject to taste.
Disable Vertical Synch - I Have No Idea and keep it unchecked.
Load All Sounds At Start - I had some instances where the game would freeze when it seemed to be looking for a particular sound effect. Checking this box seems to have fixed that minor and unusual glitch.
Play Sound in Streaming Mode - Subject to taste, have this unchecked but noted no negative effects when enabled.
Universal Audio - I Have No Idea and keep it unchecked.
AI Logs - Useful for modding but greatly increases the size of save files. Generally left unchecked.
Display game map of Gold Edition Map - Unchecking this box loads the original WW1-LGG map with its northeast - southwest orientation. Use according to taste.
Mouse Sensitivity - I have this set fairly high, with the slider mostly towards the right. Test and see what works for you.
AI Memory - This is supposed to enable the AI to actually learn from situations and apply those lessons later in the game. Some have reported issues with lock-ups that disappear when this is unchecked but I have not. Unsure of the overall effect but if the game repeatedly hangs during AI movement, unchecking this may help.
Hope this helps a bit. Good Luck.
