It appears as if this function has been lost? I reworked mine to fit within the 250 character limit but its still not showing up

You need to click on the "Attach signatures" checkbox just below where you write your new post... the new software doesn't allow to do that by default.

But does this mean it has to be chosen for each individual post?

Yep, ACW2 you could have a union or confederate infantryman, WW1 you could have another, etc, etc.
