The release video, at one point, shows a structure list that appears after the presenter clicks on Constantinople. I can't seem to figure out how to get to this list.

Second, is there any way to assess the economic importance of different cities? In RUS, manpower and war supplies are displayed on the supply map, but this crucial information only appears in an unusable form in the ledger in WON

This is planned as a later improvement of the game, just like was done in RUS. As for a summary map, it was done by volunteers. May be some will show up for WON too

I believe there are in fact 2 tutorials that indicates you need to do a ctrl-click on the structure. I have watched #6 which is touring the grand campaign? I think that's cited there too.

As an improved we do want to improve the regions list window indeed.
