How do you tell which ships are blockade runners, blockade raiders, etc.? I don't see that in their names or descriptions. Do their characteristics tell you, such as speed, combat power, etc.?

Only Brigs are blockade runners. I believe that any CSA combat ships in the Atlantic sea box are raiders.
